  • 400ml dairy-free milk (room temperature)
  • 50g caster sugar
  • 7g active dry yeast
  • 500g plain flour (plus extra for dusting)
  • Zest of 2 lemons
  • 80g fresh lemon juice
  • 125g coconut milk (cream only)
  • 125g caster sugar (for filling)
  • Cornflour/cornstarch
  • Renshaw Lemon Icing

Instructions

  1. Prepare the dough by combining dairy-free milk, caster sugar, and yeast; let it froth. Add melted butter, flour, lemon zest, and salt; knead until smooth.
  2. Allow the dough to rise in an oiled bowl for about an hour until doubled in size.
  3. Make the lemon curd filling by whisking coconut cream, lemon juice, sugar, cornflour, and optional turmeric in a saucepan until thickened.
  4. Roll out the dough into a rectangle and spread cooled lemon curd evenly over it. Roll tightly into a log; slice into 2-inch pieces.
  5. Place rolls cut-side up on a baking tray and bake at 180°C (350°F) for about 25 minutes until golden brown. Drizzle with icing before serving.
