  • 1/2 cup vegan butter, softened (for frosting)
  • 26 tbsp non-dairy milk, as needed (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • 23 cups powdered sugar, sifted (for frosting)

Instructions

  1. Prepare the flax egg by mixing ground flaxseed with water; let it thicken for about 5 minutes.
  2. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. In a large bowl, cream together the vegan butter and sugars until fluffy. Add the flax egg, molasses, and vanilla; mix well.
  4. Combine quick oats, flour, baking soda, cinnamon, baking powder, salt, and nutmeg in a separate bowl. Gradually add to the wet mixture.
  5. Scoop tablespoon-sized portions onto the baking sheet, ensuring space between each cookie.
  6. Bake for approximately 15 minutes until edges are golden; let cool before transferring to wire racks.
  7. For the frosting, beat together softened vegan butter with non-dairy milk and powdered sugar until creamy.
