Instructions
- Heat the vegetable oil in a large frying pan or wok over medium-high heat.
- Add carrots and mushrooms; cook for about 4–6 minutes until tender.
- Incorporate broccoli, bell peppers, snow peas, water chestnuts, and baby corn with 2 tablespoons of water; cook for an additional 3–5 minutes.
- Stir in minced garlic and ginger; season with salt and pepper to taste.
- In a mixing bowl, whisk together vegetable broth, soy sauce, and honey.
- Pour the sauce mixture over the vegetables; cook for another 30 seconds.
- Mix cornstarch with one tablespoon of cold water until smooth; add to the pan while bringing everything to a boil. Cook for one more minute until the sauce thickens.
