  • 4 Tablespoons butter
  • ½ cup sliced baby carrots
  • 2 celery stalks, sliced
  • ⅓ cup chopped onion
  • ⅓ cup diced red bell pepper
  • ½ cup fresh sliced mushrooms
  • 3 potatoes, peeled and diced small
  • 4½ cups chicken broth (divided)
  • ¼ cup flour
  • 2 cups half-and-half cream
  • 10 strips cooked bacon, diced (divided)
  • 2½ cups shredded cheddar cheese

Instructions

  1. In a large pan over medium heat, melt butter and sauté carrots, celery, onion, red bell pepper, and mushrooms until tender.
  2. In another pot, cook diced potatoes in 1½ cups chicken broth until tender; drain excess liquid.
  3. Add the cooked potatoes to the vegetable mixture in the large pan and sprinkle with flour.
  4. Gradually stir in remaining chicken broth and half-and-half cream; cook while stirring until slightly thickened.
  5. Reduce heat and mix in bacon bits along with dry mustard, hot sauce, garlic salt, salt, and pepper.
  6. Slowly stir in cheddar cheese until melted; do not boil after cheese is added.
  7. Serve hot with additional bacon on top.
