  • 1 pound mild Italian sausage (hot or mild)
  • 1/2 cup diced bacon
  • 45 small Russet potatoes (sliced)
  • 3 cups chopped kale
  • 6 cups low-sodium chicken broth
  • 1 cup half-and-half or heavy cream
  • 1 large onion (finely chopped)
  • 6 cloves garlic (minced)

Instructions

  1. In a heavy-based pot, cook the Italian sausage over medium-high heat until browned. Drain excess fat and set aside.
  2. In the same pot, crisp the bacon for about 2 minutes, then drain, reserving some drippings.
  3. Sauté onions in reserved drippings until softened; add garlic and cook until fragrant.
  4. Stir in flour and cook for about 2 minutes.
  5. Add chicken broth and potatoes; bring to a boil and season with bouillon and spices.
  6. Cook until potatoes are fork-tender, then lower heat and stir in cream, sausage, bacon, and kale; simmer until leaves soften.
  7. Serve hot, optionally topped with grated Parmesan.
