Ingredients
- 1 pound mild Italian sausage (hot or mild)
- 1/2 cup diced bacon
- 4–5 small Russet potatoes (sliced)
- 3 cups chopped kale
- 6 cups low-sodium chicken broth
- 1 cup half-and-half or heavy cream
- 1 large onion (finely chopped)
- 6 cloves garlic (minced)
Instructions
- In a heavy-based pot, cook the Italian sausage over medium-high heat until browned. Drain excess fat and set aside.
- In the same pot, crisp the bacon for about 2 minutes, then drain, reserving some drippings.
- Sauté onions in reserved drippings until softened; add garlic and cook until fragrant.
- Stir in flour and cook for about 2 minutes.
- Add chicken broth and potatoes; bring to a boil and season with bouillon and spices.
- Cook until potatoes are fork-tender, then lower heat and stir in cream, sausage, bacon, and kale; simmer until leaves soften.
